The whisky’s bright bourbon-cask sweetness and fresh malt character worked beautifully with the creamy softness of Wigmore, while the raspberry chocolate added a lifted fruity edge that echoed the spirit’s lively profile.

Teaninich 12yo, 1st Fill Cheval Blanc Barrique, 54.6%, 1 of 280 was matched with Prima Donna cheese and lemon & poppyseed chocolate. The wine-cask influence in the whisky brought a refined, elegant fruit note, which sat naturally with Prima Donna’s nutty richness and the citrus brightness of the chocolate.

Tamnavulin 12yo, 1st Fill PX Hogshead, 56.8%, 1 of 314 was paired with Cashel Blue and Mexico Aztec Spice chocolate. The rich sweetness of the PX cask called for a cheese with strong savoury depth, and the blue cheese provided exactly that, while the spiced chocolate added warmth and complexity to the finish.

Aultmore 16yo, 1st Fill Oloroso Hogshead, 55.4%, 1 of 282 was served with Isle of Mull Cheddar and coffee & hazelnut chocolate. Oloroso maturation often brings nutty, dried-fruit depth, and the mature, savoury character of the cheddar gave the whisky a solid base, while the chocolate reflected its toasted and earthy notes.

Lochindaal 16yo, 1st Fill Bourbon Barrel, 57.8%, 1 of 215 was matched with Ossau-Iraty and sea salt & caramel chocolate. The whisky’s bold character needed a cheese with enough richness to stand alongside it, and Ossau-Iraty provided that balance, while the salted caramel chocolate sharpened the sweetness and lifted the finish.
